Chicken Apple Sausage Patties 

  • 1 lb ground chicken
  • 1 cup very finely diced, peeled apple
  • 1 tbsp maple syrup
  • 1 tbsp finely chopped fresh rosemary
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp cayenne pepper

In a medium bowl, combine all the ingredients and mix well. Heat a nonstick skillet over medium-high heat. Make a small sample sausage patty to test the flavor and adjust the seasoning accordingly. Scoop and pat the sausage into small patties and brown on both sides until fully cooked, about 3 minutes per side.

Cheddar Scallion Grits

  • 1 cup water
  • 1 cup whole milk, plus more to thin, if needed
  • ½ tsp kosher salt plus more to taste
  • 1 tbsp butter
  • ½ cup quick-cooking grits
  • 1 cup grated white cheddar
  • 1 scallion, sliced (about 1/4 cup)

Combine water, milk, salt, and butter in a small saucepan and bring to a boil. Add the grits and stir to combine. Simmer for about 5-8 minutes until thick, turn off the heat, and cover, which will allow the grits to soften further. Add the cheese and sliced scallions, and stir. Thin with additional milk or season with more salt as needed.
